General Questions

How can I best store Leonidas chocolates?

If you want to get the most out of Leonidas chocolates containing alcohol or butter cream, we recommend storing them in a cool room and eating them cold (straight from the fridge). Pure chocolates and pralines, filled with ganache, cream, liqueur cream, or almond paste, as well as our truffles, are ideally stored at a temperature between 15 and 18°C.

It is also recommended not to store chocolates and chocolate in general near foods or other substances with a strong odor, as chocolate absorbs odors very easily.

Chocolate can engage all your senses: sight, touch, hearing, taste, and smell. All chocolate should be smooth and shiny, with an intense brown color. The taste of sugar should not be too prominent. A well-made chocolate should snap when you bite into it. If a praline starts to melt in your hand before you even put it in your mouth, it means it contains a lot of cocoa butter – a very positive sign. When the chocolate melts in your mouth, it should be smooth, leaving no other texture. Two or three chews will allow you to experience the secondary aromas. Finally, press the chocolate against your palate to release its full flavors. But most of all, take your time to truly enjoy the experience. We took our time to make it…
In a recent survey of 20,000 Belgians about their opinions on certain companies, Leonidas positioned itself as the undisputed leader in the “chocolatiers” category. In fact, 1 out of 3 quality Belgian chocolates sold comes from Leonidas – and 55% of Belgians say we are the tastiest chocolatier in the country. Not bad for the world’s most chocolate-passionate nation.

Since August 3, 2003, a European directive has allowed chocolate manufacturers to use vegetable fats (instead of cocoa butter) in their chocolates, under certain strict conditions. This directive has led to significant confusion in interpretation between manufacturers and consumers. At Leonidas, we have a clear and simple position regarding this decision. Leonidas remains and will always remain 100% faithful to cocoa butter.

Regarding palm oil specifically – a controversial ingredient – Leonidas does not use it in its pralines.

Some of our products are included in a list of products certified as “kosher dairy products” by the CrC (Chicago Rabbinical Council) (https://www.crcweb.org)

Additionally, we also have a list of authorized products, published by the Consistoire de Paris

The selection criteria of the two organizations differ. We invite you to consult their websites for more details.

For now, we do not have HALAL certification. You can consume products that do not contain alcohol.

It all depends on your type of allergy. Our Leonidas products contain a number of ingredients that cause allergies or intolerances (milk, soy, gluten, or tree nuts, for example). In short:

  • Eggs and egg derivatives (albumen)
We use biscuit inclusions containing egg white to make certain products. Therefore, traces of egg can be found in a large part of our assortment. Jellies as well as orange and lemon slices also contain
  • Gluten
Gluten is a molecule found in cereals such as wheat, barley, oats, and their derivatives like malt. Some Leonidas products are made with gluten-containing ingredients and may therefore also contain it.
  • Nuts
Our entire assortment may contain traces of nuts. Many Leonidas products indeed contain nuts as major ingredients (hazelnuts, walnuts, almonds, pistachios, pecans, etc.).
  • Milk (lactose, dairy proteins, etc.)
Dairy products naturally play a crucial role in the making of most Leonidas products. Despite strict cleaning procedures, traces of milk may be present in all products, including those whose ingredients do not include milk or milk derivatives.

Leonidas suppliers guarantee that the soy lecithin used in the manufacturing process comes from strictly controlled plantations to ensure that they do not contain genetically modified soy. They guarantee that PCR analyses are negative.

The same applies to glucose or products containing glucose: our suppliers guarantee that glucose is produced from starch derived from non-genetically modified wheat and that controls are carried out to ensure the absence of genetically modified corn in the manufacturing process.

Chocolate is known for its antidepressant benefits, linked to the small amount of serotonin it contains. Serotonin is a substance that naturally occurs in the brain, and its level directly affects our mood. Other components in chocolate help us stay awake and alert, fuel muscles during intense effort, stimulate appetite, and support mental activity and attentiveness. Remember that high-quality chocolate contains only cocoa, pure cocoa butter, and sugar.

There are two types of bloom: fat bloom and sugar bloom. Fat bloom is a smooth film on the surface of the chocolate that you cannot actually feel. Sugar bloom, on the other hand, appears and is felt as a succession of tiny sugar crystals.

Fat bloom (or fat migration) is caused by fats migrating to the surface of the chocolate or by their recrystallization. This can result from a chocolate layer that is too thin, imperfect tempering, filling migration, or storing chocolate at an unsuitable temperature.

Sugar bloom is caused by the recrystallization of sugar in chocolate. This phenomenon occurs when condensation forms on the chocolate due to a significant temperature difference and high humidity.

Chocolate should always be stored in a dry place, between 15 and 18°C. This is precisely how we store our Leonidas chocolates to guarantee that they are supplied to you in optimal condition.

In fact, it’s quite the opposite. Once absorbed by your body, cocoa produces 72% unsaturated fatty acids which actually reduce your cholesterol and clean out your arteries. It contains only 20% saturated fatty acids, which aren’t good for you. There is very little cholesterol in dark chocolate made with 100% cocoa butter, like Leonidas does. In milk chocolate, cholesterol ranges from 15 to 18 mg per 100 g, which is practically insignificant.

We all need magnesium in our diet to improve the quality of our neurovascular functions. Unfortunately, a typical diet usually provides only the bare minimum. The good news is that chocolate is rich in magnesium.
